Gluten is a plant-based protein composed of gliadin and glutenin. Add an appropriate amount of water and a little salt to the flour, stir well and vigorously to form a dough. Later, rub it repeatedly with clean water to remove all starch and other impurities from the dough, leaving behind gluten. Roll the dough into a ball shape by hand and fry it in a hot oil pan until golden brown. Remove and serve. Put the washed gluten into a boiling water pot and cook for 80 minutes until it is cooked, which is called "water gluten"
