The second part of this standard specifies the determination of inorganic arsenic content in food by liquid chromatography-atomic fluorescence spectrometry and liquid chromatography-inductively coupled plasma mass spectrometry. The first, second, and third methods of the first part of this standard are applicable to the determination of total arsenic in various types of food. The second part is applicable to the determination of inorganic arsenic (including arsenate and arsenite) content in rice, aquatic animals, infant and young children's cereal auxiliary foods, and canned auxiliary foods for infants and young children. The first method for the determination of total arsenic is Inductively Coupled Plasma Mass Spectrometry. The sample is digested with acid to form a sample solution. The sample solution is atomized and sent into an ICP torch tube by carrier gas. After evaporation, dissociation, atomization, and ionization, it is converted into charged ions, which are then collected by an ion collection system and entered into a mass spectrometer. The mass spectrometer separates the sample solution based on the mass to charge ratio. For a certain mass to charge ratio, the signal strength of mass spectrometry is directly proportional to the number of ions entering the mass spectrometer, that is, the sample concentration is directly proportional to the signal strength of mass spectrometry.
